Chocolate Dipped Cherries Ingredients
Cherries: Use firm, ripe cherries with stems for the best results. Bing cherries are recommended for their sweetness and juiciness, but Rainier or tart cherries also work well.
Dark, Milk, or White Chocolate: When choosing chocolate, quality can make a big difference in flavor and texture. Here are a few brands I recommend at different price points:
-
Budget-Friendly: Ghirardelli offers solid options across dark, milk, and white chocolate varieties that are widely available and reasonably priced.
-
Mid-Range: Lindt delivers a smoother, richer experience with a variety of flavors. Their Excellence line, in particular, is a great choice for dark chocolate lovers.
-
Premium: Valrhona is a top choice for its exceptional quality and refined taste. Their dark, milk, and white chocolates are used by professional chefs and bakers worldwide, making it a luxurious option if you're looking to elevate your dessert.

Test Kitchen Notes
Dry Thoroughly: Ensure cherries are completely dry before dipping. Moisture can cause the chocolate to seize, resulting in a less smooth finish. Pat cherries dry with a paper towel and let them air dry if necessary.
Chill Cherries: For optimal results, refrigerate the cherries for a few hours before dipping. Chilled cherries help the chocolate set quickly and evenly, preventing it from melting too fast and creating a messy coating.
Thicker Coating: For a richer chocolate layer, dip cherries twice. Allow the first coating to harden before re-dipping for a more substantial chocolate cover.
Decorative Touches: Enhance your chocolate-dipped cherries by drizzling white chocolate over dark-coated cherries or sprinkling sea salt on top for a sweet and salty contrast. Consider adding crushed nuts or sprinkles for extra texture and flavor.
Storage: Store dipped cherries in an airtight container in the refrigerator. For best results, enjoy them within a few days as long-term storage can cause condensation on the chocolate.
FAQs
Why shouldn’t you refrigerate chocolate-dipped fruit?
Refrigerating chocolate-dipped fruit can lead to condensation, making the chocolate coating wet and sticky. Store in a cool, dry place to maintain the chocolate’s texture.
What are chocolate-covered cherries called?
Chocolate-covered cherries are often referred to as Cherry Cordials. Traditional versions feature cherries soaked in liqueur and covered in chocolate.
How long are chocolate-covered cherries good for?

High-quality couverture chocolate is ideal for dipping. Its higher cocoa butter content ensures a smooth melt and a glossy, crisp coating.
Recipe Card
ingredients
- 1 1/4 pounds cherries (with stems)
- 8 ounces dark, milk or white chocolate
Method
Step 1
Rinse the cherries and spread them on a dish towel or paper towel. Pat completely dry and chill in the refrigerator for several hours until very cold.
Step 2
Line a large baking tray with parchment paper or a silicone mat.
Step 3
Place chocolate in a small glass bowl. Heat an inch of water in a medium pot until simmering.
Step 4
Place the glass bowl over the pot, making sure it doesn’t touch the water. Stir the chocolate until melted and smooth, about 1-2 minutes. You can also melt the chocolate in the microwave in 30-second increments, stirring often, but be careful to not burn the chocolate.
Step 5
Carefully remove the bowl from the pot, dry the outside, and pour the melted chocolate into a tall, narrow cup for easier dipping.
Step 6
Holding the stem of each cherry, dip it into the chocolate, letting any excess drip off. Place the dipped cherry on the lined tray. Repeat with remaining cherries and refrigerate the tray until the chocolate hardens.
Step 7
Once the chocolate is set, enjoy immediately or keep chilled until serving.
