Gochujang Noodles with Zucchini
"Eating noodles, most often soba, during New Year’s is a long-standing Japanese tradition thought to bring luck in the coming year. There’s no question, noodles WILL be served in our house on New Year’s Day. More specifically, these saucy gochujang noodles! They’re easy, feature a silky sauce, and are full of flavor! This recipe calls for both rice noodles and zucchini noodles, but you can certainly use soba instead."
