Lemon Simple Syrup
- 4 lemon halves, juiced
- 1 cup sugar
- 1 cup water
Method
Step 1
Juice two lemons and set the juice aside for the cocktail. Add the 4 juiced lemon halves to a small saucepan and add 1 cup granulated sugar or honey and 1 cup water. Bring mixture to a boil over high heat and cook 2 minutes; remove from heat and let steep until cooled completely. Strain through a fine-mesh sieve and discard solids.

- 1 1/2 ounces dry gin
- 1/2 ounce fresh lemon juice
- 3/4 ounce lemon simple syrup
- 3 ounces dry sparkling wine
- Lemon twist for garnish
Step 1
Add gin, lemon juice and simple syrup to a champagne flute. Top with sparkling wine and garnish with a lemon twist.
