"Dr. Z's Ancient Grain & Seed Banana Nut Loaf (my family gobbled it up, great for kids to make and eat too!) ~
RECIPE:
• 1/2 cup amaranth
• 1/2 cup chopped dates
• 1 banana
• 1 cup boiling water
• 2 eggs or egg substitute
• 1/4 cup coconut oil or butter, melted
• 1/3 cup maple syrup
• 1 tsp vanilla extract
• 2 cups millet flour
• 2 tsp non-aluminum baking powder
• 1 cup chopped walnuts
Soak dates and amaranth in boiling water for 15-20 mins. Beat eggs, add maple and coconut oil and keep beating. Stir in all remaining ingredients. Pour into oiled loaf pan and bake at 350F for 1 hr 15 min. Makes 1 loaf. Enjoy!!!
