Dr. Z's Ancient Grain & Seed Banana Nut Loaf
Dr. Z's Ancient Grain & Seed Banana Nut Loaf (my family gobbled it up, great for kids to make and eat too!) ~ <br><br> RECIPE:<br><br> • 1/2 cup amaranth<br> • 1/2 cup chopped dates <br>• 1 banana<br> • 1 cup boiling water<br> • 2 eggs or egg substitute<br> • 1/4 cup coconut oil or butter, melted<br> • 1/3 cup maple syrup<br> • 1 tsp vanilla extract<br> • 2 cups millet flour<br> • 2 tsp non-aluminum baking powder<br> • 1 cup chopped walnuts<br><br> Soak dates and amaranth in boiling water for 15-20 mins. Beat eggs, add maple and coconut oil and keep beating. Stir in all remaining ingredients. Pour into oiled loaf pan and bake at 350F for 1 hr 15 min. Makes 1 loaf. Enjoy!!! <br><br>TIP: Amaranth is an ancient grain full of fiber, protein and iron! Tons of nutrients and a great binder for baked goods. <br><br> TIP: Millet flour is a gluten free nutrient rich alternative to wheat, replace up to 25% for wheat flour recipes.

You seriously can't buy this stuff, and why would you when even a kid can make it? Dairy-free, gluten-free, sugar-free, full of protein and goodness, and fresh out of the oven, I think we would gobble it up too!
