ingredients
Mushroom Pasta
- 2 cloves of garlic, minced
- 1/2 onion, finely chopped
- 3/4 cup shiitake mushrooms, sliced `
- 2 servings of spaghetti
- cracked pepper
- pinch of salt
- 2 tablespoons truffle parmesan and black pepper butter
- 1 tablespoon olive oil
- 1/4 cup chopped parsley

Soy Sauce Mixture
- 2 tablespoons light soy sauce
- 1 teaspoon dark soy sauce
- 1/2 teaspoon sugar
Method
Soy Sauce Mixture
Step 1
Combine all ingredients in a small bowl. Set aside.
Mushroom Pasta
Step 1
Cook spaghetti according to packet instruction, ensure to salt your water generously.
Step 2
In a pan, heat 1 tbsp olive oil and 1 tbsp butter on medium heat and fry garlic and onions until the onions are translucent.
Step 3
Add mushrooms and cook until tender, season with a pinch of salt and cracked black pepper.
Step 4
Add spaghetti to the pan and add a couple of ladles of the pasta water, along with the soy sauce mixture and the rest of the butter, combine well. Add parsley (reserve a bit for garnish) and toss through.
Step 5
Serve with additional parsley leaves to garnish and cracked black pepper - enjoy!
