ingredients

  • 1 cup (120 grams) almond flour
  • 6 - 10 soft, pitted Medjool dates
  • 1 - 2 tablespoons matcha powder, to taste
  • 2 ounces dark chocolate (55g, roughly ⅓ cup chopped or ¼ cup chips)

Method

  • Step 1

    In a high-powered food processor, blend almond flour, dates, and matcha until a soft dough forms.

  • Step 2

    Roll the mixture into small balls and set aside.

  • Step 3

    Melt the dark chocolate.

  • Step 4

    Spoon about 1 teaspoon of melted chocolate into the base of each cupcake mold or silicone mini muffin liner. Freeze for 5 minutes to set.

  • Step 5

    Press one matcha dough ball into each mold and flatten slightly.

  • Step 6

    Top with additional melted chocolate to cover.

  • Step 7

    Freeze until firm (about 25–30 minutes).

  • Step 8

    Store in the freezer and enjoy straight from there!
