- 1 (16-ounce) bag frozen fire-roasted corn
- 1/4 cup Vegenaise (or any vegan mayo)
- Juice of 1 lime
- 1/2 teaspoon garlic granules
- 1/2 teaspoon pink salt
- 1/2 teaspoon Tajín
- 1 jalapeño, seeded and diced
- 1/2 cup freshly chopped cilantro
- 2 garlic cloves (optional), minced
- 1/4 cup dairy-free feta cheese
- 2 scallions, chopped
- Tortilla chips, for serving

Step 1
Cook the corn according to package instructions and let cool slightly.
