  • 1 (16-ounce) bag frozen fire-roasted corn
  • 1/4 cup Vegenaise (or any vegan mayo)
  • Juice of 1 lime
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon pink salt
  • 1/2 teaspoon Tajín
  • 1 jalapeño, seeded and diced
  • 1/2 cup freshly chopped cilantro
  • 2 garlic cloves (optional), minced
  • 1/4 cup dairy-free feta cheese
  • 2 scallions, chopped
  • Tortilla chips, for serving

Method

  • Step 1

    Cook the corn according to package instructions and let cool slightly.

  • Step 2

    In a small jar or bowl, whisk together the Vegenaise, lime juice, garlic granules, pink salt, and Tajín to make the dressing.

  • Step 3

    In a large bowl, combine the cooled corn with the diced jalapeño, cilantro, garlic (if using), and dairy-free feta.
