ingredients
- 1 chopped onion
- 2 tablespoons olive oil
- 1 cloves garlic
- 1 teaspoon minced ginger
- 1 deseeded and finely diced red pepper
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon coriander seeds
- 1 teaspoons mustard seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 can drained chickpeas
- 1 can crushed tomatoes
- 1 can coconut milk
- To Taste salt
- bunch of chopped cilantro
- 1 zest and juice of lime
Method
Step 1
On medium-high heat, add your olive oil
Step 2
Sauté onions until translucent
Step 3
Add the spices, garlic, ginger, and red pepper and toast it under aromatic
Step 4
Add your chickpeas, crushed tomato, and coconut milk
Step 5
Simmer until it thickens and garnish with cilantro. Enjoy!
