ingredients
- 2 tablespoons Sourdough
- 1 tabelspoons raw Sugar
- 1 teaspoons kosher Salt
- 1 cup Kefir or buttermilk
- 3/4 cups Flour
Method
Step 1
In a bowl mix sourdough, sugar and kefir Whisk lightly to incorporate ingredients
Step 2
Mix salt and flour together and sift it into sourdough mix. Fold-in using rubber spatula or spoon Add egg and whisk just long enough to blend it in The structure of the pancake batter should remind of sour cream, if it's too loose add more flour, if it's too thick add kefir or water Let batter rest for 10min in warm spot
Step 3
Heat up your pancake pan, add clarified butter (gives nice flavor to pancakes) or rafinated vegetable oil Use 4oz ladle to pour batter on the pan. Depending on the size of the pan, it can fit up to 4 pancakes, don't overcrowd your pan When pancakes are getting little wholes and bubbles on the raw side, it is time to flip them It needs another couple minutes for pancakes to be ready Feel the center of the pancake if it is firm and bouncy, it means pancake is ready Serve them fresh and hot, with some sour cream, jam, fresh fruits and berries, honey or syrup. Decorate with confectioners sugar.
