ingredients
- 1 (16 ounce) Cascadian Farm Organic Spud Puppies
- 1/2 (15 ounce) Canned black beans, drained
- 1 cup Pepper Jack Cheese, shredded
- 1 cup Cabbage, chopped
- 1 small Tomato, diced
- 1/2 Avocado, diced
- 1 Jalapeño, thinly sliced
- 1 scoop Sour Cream
Method
Step 1
Preheat oven to 450°F.
Step 2
Line a baking sheet with parchment paper. Spread Spud Puppies in an even layer. Roast for 17 minutes.
Step 3
Push Spud Puppies to the center, then sprinkle with beans and cheese. Bake for another 3-5 minutes.
Step 4
Top with cabbage, tomato, avocado, jalapeño and sour cream, if desired.
