Whole Wheat Kaboucha Squash Bread


1/2 cup + 1/4 cup of Whole Wheat Flour
1/2 cup + 1/4 cup Unbleached AP Flour
1 tsp of Kosher Salt
1 tsp of Baking Soda
1 tsp of ginger powder
1 cup of pureed Kabocha Squash
1 tsp of Chinese 5 Spice Powder
1 tsp of Pure Vanilla Extract
1/2 lb of room temperature Unsalted Butter
1/2 cup of Sugar
1/3 cup of Maple Syrup
2 eggs
1/2 cup of Sour Cream

Pre heat oven at 350 degrees
Butter up a 9 x 5 inch loaf pan
Combine all flour mixture, baking soda, kosher salt, ginger thru a sifter in a bowl
In separate bowl, combine pureed kabocha squash, chinese 5 spice powder and vanilla extract
In a food processor, mix room temperature butter, maple syrup and sugar until combine                              Add eggs in the butter mixture and mix to combine

Add flour mixture in the butter and egg mixture and mix to combine
Add kabocha squash mixture and sour cream into the flour mixture and mix until well combine
Transfer the batter into the butter up loaf pan
Place the loaf pan in the middle rack of the oven and bake for 1 hour or until the center comes clean with a toothpick!
