Strawberry and Cherry Chia Seed Jam

"had more of the strawberry cherry chia seed jam i made yesterday but on top of sourdough for breakfast today 🍓🍒 the top one has mashed avocado, hard boiled egg and smoked salmon. the bottom one has @georgiagrinders crunchy almond butter, sliced bananas, blueberries, strawberry cherry chia seed jam and @beekeepers_naturals bee pollen! bee pollen has antibacterial and anti-inflammatory properties! similar to all “superfoods”, it doesn’t have any instant healing properties. i personally love it for it’s subtle sweet taste and texture. i sprinkle it on my toast and breakfast bowls often 🥰 i loveee colorful foods and the random sprinkles of all the seeds/nuts and seasonings on foods 🙌🏼"

ingredients

  • 1 tablespoon chia seeds
  • 1/4 cup plant milk or water
  • 1/2 cup chopped strawberries
  • 1/2 cup chopped cherries
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla

Method

  • Step 1

    To make the chia seed jam, first soak chia seeds with 1/4 cup water or almond milk for 30 mins.

  • Step 2

    In a small pot on low heat, warm up 1/2 cup chopped strawberries and 1/2 cup chopped cherries - about 10 mins, mashing up fruit pieces and stirring often. the smaller the chopped fruit, the better.

  • Step 3

    Mix in chia seed mixture, 1 tbsp maple syrup, 1 tsp lemon juice and 1/2 tsp vanilla extract. place in a sealed mason jar in your fridge!
