Breakfast Fruit Tarts With Cashew Cookie Crust

- 4 bar LÄRABAR Cashew Cookie
- 1/ 4 cup raw oats
- 3 tablespoon maple syrup
- 3 tablespoons coconut oil, melted
- Plain or Vanilla Yogurt
- 1 box of Strawberry, sliced, to garnish
- 1 box Blueberries, sliced, to garnish
- Kiwi, sliced, to garnish
- Mango, slices, for garnish
Preheat oven to 325F. Prepare 4 mini tart pans with nonstick spray.
In a small mixing bowl, mash together 4 cashew cookie LÄRABARS and coconut oil. Mix until all ingredients are moistened and texture can form a crust.
Press cashew cookie crust into tart pans, evenly on bottom and up sides. Bake for 15 minutes or until golden brown.
Allow tarts to cool for 5 minutes before removing from tart pans. Place into the fridge for 15 minutes to firm.
Add 1/4 cup yogurt into each tart. Serve immediately topped with fresh fruit.
