Peanut Butter Raspberry Bark

ingredients

  • 10 ounces bittersweet chocolate chips
  • 20 Ritz crackers
  • 3/4 cup crunchy peanut butter
  • 6 tablespoon (5 grams) powdered sugar
  • 1/2 cup raspberry jam
  • Flaky sea salt

Method

  • Step 1

    Line a 9x13 baking pan with parchment paper, making sure you can grab it to lift the bark out.

  • Step 2

    In a small saucepan over low heat, melt the chocolate chips. Set aside.

  • Step 3

    Spread half of the chocolate over the parchment paper in a thin layer. It will not reach the sides of the pan. Place Ritz crackers 5 across and 4 down. Place in freezer to set.

  • Step 4

    In a small bowl, mix together the peanut butter and powdered sugar. Remove the pan from the freezer and spread the peanut butter over the Ritz. Spread the jam over that.

  • Step 5

    Sprinkle with sea salt and put back in the freezer until completely set.

  • Step 6

    Remove from the freezer and cut into pieces. The jam doesn’t set all the way so it will be a little gooey!
