ingredients

  • 1 3/4 cups flour
  • 1 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teapsoons salt
  • 1/2 cup avocado oil
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large room temperature eggs
  • 1 tablespoon orange liqueur
  • 5 zested mandarin oranges
  • 1/2 cup heavy cream
  • 1 1/2 cups chopped bittersweet chocolate chips

Method

  • Step 1

    Preheat oven to 425ºF. Line a muffin tin with paper liners.

  • Step 2

    In a small bowl, whisk together the flour, baking powder, baking soda and salt.

  • Step 3

    In a small measuring cup, mix together the heavy cream and mandarin juice.

  • Step 4

    n the bowl of an electric mixer, beat together the oil and sugars on medium speed until light in color, about 2 minutes. Scrape the sides and bottom of the bowl. On low speed, add the eggs and the orange liqueur until well combined.

  • Step 5

    Alternately add the flour and heavy cream mixture, ending with the flour. Fold in the zest and chocolate chips.

  • Step 6

    Bake for 15-18 minutes or until a toothpick comes out with crumbs attached.

  • 2 1/2 juiced mandarin oranges

Glaze

  • Step 1

    While the muffins are baking whisk together the powdered sugar and mandarin juice.

  • Step 2

    Let muffins cool for a few minutes in the pan. Transfer to a wire rack, top with glaze and let cool a few more minutes. Serve warm.
