Asian Chickpea Rice Paper Tacos

My Recipes
To me, this is comfort food. It’s the type of food I grew up with and lately have been craving over and over again. It’s really quite simple with just some sautéed cabbage, sausage and leftover roasted veggies thrown in at the last minute along with a splash of apple cider vinegar. • Growing up, my dad was the chef of the family. He cooked us dinner almost every night and we were expected to sit together at the table and enjoy our meal. It wasn’t necessarily “healthy” but it was made with care and was real hearty food that often reflected his own roots and experiences. • My dad grew up the eldest of five children to his parents who had German roots. They didn’t have much and with my Grandpa working as a butcher, they would cook less popular, cheaper cuts of meats in ways that could make it stretch enough to feed everyone. My Dad took this knowledge with him and fed our family the same way. Nothing in our house went to waste and leftovers were often repurposed in meal after meal. We joked that Dad would even save one small broccoli floret if it was left. • So it’s no surprise these are the foods I enjoy today, especially when I miss having him here. And while I’m definitely not as resourceful as my father, when I cook meals like this I like to think I’m continuing in his tradition and in some way getting to share another meal around the table with him. #fuelyoursoul #wellnessbykristen @wellnessbykristen #foodstories #huffposttaste @huffposttaste
