White Chicken Chili with Homemade Tortilla Strips

ingredients
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tablespoon olive oil
- Salt, to taste.
- Black Pepper, to taste.
- 1/2 teaspoon oregano
- 1/2 teaspoon chili powder
- 1 teaspoon cumin
- 1 can (15.5 oz) Great Northern beans
- 1 can (7 oz) fire roasted diced green chilis
- 1 1/2 cups cooked chicken, shredded or thinly sliced
- 32 oz chicken broth
- 1 cup frozen corn
- 8 corn tortillas
- Olive oil, to spray
- 1 lime, juiced
- 1/4 cup cream cheese
- Fresh cilantro, to taste.
- Pepper jack, for servings
- Cheddar Cheeses, for servings
Method
Step 1
Set the oven to 425 degrees.
Step 2
In a dutch oven or large pot add the olive oil, garlic, and onion. Saute over medium heat for 5-10 minutes or until soft & translucent.
Step 3
Season generously with salt, and pepper. Add in the oregano, chili powder, and cumin. Saute for another minute.
Step 4
Add the beans, green chilis, chicken, chicken broth, and frozen corn. Bring to a boil and then reduce the heat. Add the lime juice and let simmer uncovered for 30-45 minutes depending on desired thickness.
Step 5
While the chili is cooking, prepare your homemade tortilla strips. Cut the tortillas into strips and spread on a baking tray. Spray with olive oil, add salt, and toss. Bake for 5 minutes, toss, and bake for another 5 minutes.
Step 6
Turn the heat off once the chili is at your desired thickness. Add the cream cheese and stir until it is completely melted and combined. Season with salt & pepper to taste.
Step 7
Serve with the tortilla strips, pepper jack or cheddar cheese, and fresh cilantro.
