ingredients

  • 3 ears of corn, shucked
  • butter, as needed
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 (15.5 ounce) can black beans, drained and rinsed
  • 2 tomatoes, chopped
  • 1/2 yellow onion, chopped
  • 1/4 crumbled queso fresco, plus more for serving
  • 2 tablespoons mayonnaise
  • 1 lime, juiced
  • 1 teaspoon garlic powder
  • TABASCO® Chipotle Sauce, to taste
  • fresh cilantro, to taste
  • tortilla chips, for serving

Method

  • Step 1

    Preheat oven to 375 degrees F. Place each ear of corn on a piece of foil. Add butter, season with salt and pepper. Wrap and place on a sheet tray. Bake for 30 minutes. Cut kernels off cobs.

  • Step 2

    In a large mixing bowl, add corn, black beans, tomato and onion.

  • Step 3

    Add queso fresco, mayonnaise, lime juice, garlic powder, and Tabasco Chipotle Sauce, stirring to combine. Season with salt.

  • Step 4

    Transfer dip to a serving bowl. Top with more queso fresco, cilantro and a drizzle of Tabasco Chipotle Sauce.

  • Step 5

    Place the dip in a serving bowl and top with fresh cilantro, extra queso fresco, and a drizzle of Tabasco Chipotle Sauce. Serve with tortilla chips.
