Pumpkin Batter:

  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar or coconut sugar
  • 1/2 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup avocado oil or melted coconut oil
  • 1/2 cup chocolate chips (a mix of semi-sweet and dark)

Chocolate Batter:

  • Half of the original pumpkin batter mixture
  • 1/2 cup cocoa powder
  • 2 tablespoons milk of choice

Method

  • Step 1

    Preheat the oven to 350F. Lightly grease and line a standard loaf pan with parchment paper; set aside.

  • Step 2

    In a large bowl, whisk together brown or coconut sugar, pumpkin puree, maple syrup, egg, vanilla, and avocado or melted coconut oil until smooth.

  • Step 3

    Add the flour, baking powder, baking soda, pumpkin pie spice, and salt to the wet ingredient mixture. Use a wooden spoon or spatula to mix until combined and smooth.

  • Step 4

    Transfer about half of the batter to a separate medium bowl to use for the chocolate batter. Add cocoa powder and milk, and mix until smooth. Fold in 1/4 cup of chocolate chips.

  • Step 5

    Add alternating scoops of pumpkin and chocolate batter to the prepared loaf pan (I recommend doing this in two rounds). Use a butter knife to run through and gently swirl around the batter to create a marbled effect.

  • Step 6

    Sprinkle the remaining chocolate chips all over the top of the batter.

  • Step 7

    Bake for 40-45 minutes or until a toothpick inserted into the middle comes out clean.

  • Step 8

    Remove from the oven and allow to cool in the pan for 5-10 minutes, then transfer the loaf from the pan to a wire cooling rack to cool completely.

  • Step 9

    Slice and serve.
