1) Granola + a little date syrup, pressed down firmly into ice pop moulds 2) Coconut (or regular high-fat) unsweetened yogurt 3) Berry compote (I used bluebs + maple syrup) 4) Freeze for at least 4 hours. Enjoy!
Makes 5 popsicles
3/4 cup store-bought or homemade granola
1-2 tablespoons date syrup
1 1/4 cup nsweetened coconut yogurt
1/3 cup blueberry compote (cook blueberries with maple syrup for a homemade version)
Soak popsicle sticks in cold water for 10 minutes.
Mix the granola with 1 tablespoon date syrup. Add 1 more tablespoon date syrup if the mixture doesn't stick together when pinched together with your fingers.
Press the sticky granola into the bottom of 5-6 popsicle molds.
Next, add about 1/3 to 1/2 cup of coconut yogurt to each of the popsicle molds. Add 1-2 tablespoons of the blueberry compote to the top of the mold and swirl into the yogurt.
Place the popsicle sticks in the center of each popsicle.
Freeze for 4 hours or best overnight.
