Cinnamon Steel Cut Oats with Caramelized Bananas

- 1 3/ 4 cup water or milk
- 1/ 2 cup steel cut oats
- 1/ 2 teaspoon chia seeds
- 1/ 2 teaspoon cinnamon
- 1 banana, sliced
- 1 teaspoon coconut oil
- 1/ 4 cup plain greek yogurt
- 2 tablespoon peanut butter
- 1/ 4 cup pomegranate seeds
- Garnish with pepitas, cacao nibs and hemp seeds
Heat water or milk in a medium saucepan and bring to a boil over medium heat. Stir in the steel cut oats, chia seeds, and cinnamon. Simmer for 20 minutes, stirring occasionally.
In a small pan, heat the coconut oil over medium heat. Add sliced bananas to the pan and cook until caramelized, about 3-5 minutes.
