Recipe

  • 1 slice sourdough bread, toasted
  • 1/ 2 avocado, mashed
  • Pea shoots
  • Hemp Seeds
  • drizzle of extra virgin olive oil
  • 1 large egg
  • Salt and pepper, to taste

Method

  • Step 1

    Add egg to a pot and cover completely with water. Bring water to a boil on the stove over the heat. Turn off the heat, and let the pot remain on the stove for 5 minutes. Next, drain the water and peel the egg under cold water. Slice the egg into quarters.

  • Step 2

    Mix mashed avocado with lemon juice. Spread the avocado mixture over the toasted bread. Top with pea shoots, hemp seeds, a drizzle of olive oil, the hard-boiled egg, salt, and pepper.
