These fluffy healthy banana muffins make for a yummy quick breakfast or snack.

ingredients

  • 1 cup overripe mashed bananas
  • 1/2 cup almond milk
  • 1/4 cup melted coconut oil
  • 1 flax egg
  • 1 teaspoons vanilla extract
  • 1 3/4 cups oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup walnuts, chopped

Method

  • Step 1

    Preheat oven to 350F and line & grease a 12 muffin tin

  • Step 2

    Add oats to a food processor and blend into a flour texture. Combine all dry ingredients in a medium sized bowl

  • Step 3

    In a separate bowl, combine all wet ingredients. Add dry to wet and stir till just combined (don’t overmix!). Fold in walnuts

  • Step 4

    Transfer batter to prepared muffin moulds. Top with extra walnuts and bake 23-25mins until lightly golden. *add 1/4c coconut sugar if you prefer sweeter muffins
