Bulgogi Pulled Pork

  • 3 pounds pork shoulder
  • 4 cups bulgogi marinade, divided
  • 2 onions, roughly chopped
  • 2 carrots, roughly chopped

Sandwich

  • 1 crispy French baguette
  • 1 1/2 pounds bulgogi pulled pork (above)
  • Lee Kum Kee Sriracha Mayo, to taste
  • 1 cucumber, thinly sliced
  • 1/2 cup kimchi
  • 1/3 cup cilantro leaves
  • 3 cups daikon, julienned
  • 2 medium carrots, julienned
  • 3 tablespoons rice vinegar
  • 2 tablespoons maple syrup (or sugar)

Method

To make the bulgogi pulled pork

  • Step 1

    Place the pork shoulder in a large pot.

  • Step 2

    Pour 3 cups of the bulgogi marinade over the pork, ensuring it's well-coated.

  • Step 3

    Add the roughly chopped onions and carrots on top.

  • Step 4

    Cover with water.

  • Step 5

    Bring the pot to a boil and reduce heat to medium-low for 4 hours until the pork is tender and easily shreds with a fork.

  • Step 6

    Once the pork is cooked, use two forks to shred it directly in the slow cooker. Mix the shredded pork with the cooking juices.

  • Step 7

    Stir in 1 cup of the bulgogi marinade. Set aside until ready to assemble sandwiches.

To make the pickled carrots and daikon

  • Step 1

    Combine julienned Korean radishes and carrots in a bowl.

  • Step 2

    In a separate bowl, mix rice vinegar, maple syrup (or white sugar), and salt until sugar dissolves.

  • Step 3

    Pour the vinegar mixture over the radish and carrots. Toss to coat evenly. Allow to pickle for at least 30 minutes.

To assemble the sandwich

  • Step 1

    Cut the French baguette into desired sandwich-sized pieces.

  • Step 2

    Spread a generous layer of Sriracha mayo on both sides of the baguette.

  • Step 3

    Add thinly sliced cucumber, kimchi, and pickled carrots and daikon.

  • Step 4

    Add a good portion of bulgogi pulled pork on the bottom half of the baguette.

  • Step 5

    Sprinkle cilantro leaves on top. Slice in half and serve.
