"This may as well be the cure to the end-of-summer blues… a taste of summer! A few tips when making ceviche: 1️⃣Always use the freshest fish possible (aka sushi grade). 2️⃣Marinate the fish in the fridge for 8 hours or overnight, until the color is opaque and it has a "cooked" look. 3️⃣Serve chilled with plantain chips or @sietefoods grain-free tortilla chips. Lime juice contains vitamin C, flavonoids, and antioxidants, not to mention the fact that it will stimulate the production of stomach acid, helping your stomach to digest better and potentially reduce bloating! The acidity in limes and lemons is an intrinsic ingredient of ceviche, not just to change the structure of the proteins in raw fish, cooking it without using heat, but to give ceviche that distinctive refreshing taste."
