Vegan Zucchini Fritter Tacos with Pico de Gallo & Blackberry Tahini Dressing

Zucchini Fritters

1 ½ of Almond Meal
½ a cup of Chia Seed Meal
3 cups of shredded Zucchini
4-5 Garlic Cloves
1 tbsp of Tapioca Starch
3 tbsp of Nutritional Yeast
1 tbsp of onion powder
1 tbsp of cumin
1 tbsp of oregano
1 stp of turmeric powder
1 tbsp of black pepper
A dash of salt

Cucumber Pico De Gallo

3/4 of purple onion
1 cup of cucumber
1 cup of tomatoes
¼ of a cup of a bell pepper
half a jalapeno
3-4 garlic cloves
Half a lime
1 tbsp of cumin
1 tsp of oregano
1 cup of coriander
Half a tsp of pink salt

Fruit salad

1-½ cubes peaches
7-9 heirloom cherry tomatoes
12 yellow cherry tomatoes
¼ a cup of fresh coriander
1/8 sliver of limejuice
A dash of black pepper
A dash of pink salt

Blackberry tahini dressing

5 blackberries
1 tbsp of tahini
1 tbsp of water
1 tsp of cumin
A dash of pink salt
