Eggplant Toast Topped With Hummus, Avocado And Almond Cream Cheese

Ingredients

 

1 medium eggplant, cut into 1/2 inch slices

2 cloves garlic, minced

olive oil, as needed

salt and freshly ground black pepper

Topping options: watermelon radish + snap peas + za'atar, avocado + zucchini ribbons + za'atar,  tahini + blueberries + dried mint, almond milk cream cheese + dried mint + pomegranate, red pepper hummus + cabbage + pine nuts, avocado + sliced radish + za'atar 

Directions

 

Preheat the oven to 400˚F. Toss slices of eggplant in olive oil, garlic & sea salt and roast for 25 minutes, flipping half way through.  Add toppings of choice and enjoy!
