ingredients
- 100 milliliter full fat coconut milk
- 100 milliliter oat milk
- 1 tsp fruit syrup
- 1 tsp matcha powder
- 2 pieces passion fruit
- 3 tablespoon chia seeds
- 250 milliliter full fat coconut milk
- 1 pieces large lemon
- 1 tablespoon lemon zest
- 2 tablespoon corn starch
- 60 milliliter fruit syrup
- 1/2 tsp agar agar
Method
Step 1
First prepare the chia pudding. :In a small mixing bowl combine 100ml of full fat coconut milk, 100ml of oat milk, 1 tbsp of Fruit syrup , 1 tsp of matcha powder and 3 tbsp of chia seeds. Whisk until well combined and place in the fridge for 1 hour or overnight .
Step 2
Now create the lemon Curd : Blend 250ml of full fat coconut milk, juice of 1 large lemon, 1 tbsp of lemon zest, 1 tbsp of corn starch, 60ml of fruit syrup and half tsp of agar agar. Blend , until well combined. Pour into a saucepan and bring to a simmer. Cook for 30 seconds, whisking frequently.Remove from heat and let cool to room temperature. Whisk from time to time in order to accelerate cooling process and avoid any lumps from forming. refrigerate for at least 30 minute before using
Step 3
In the morning or after 3 hours you can start creating the layers, first create the. fresh passion fruit pulp , then the matcha chia pudding , then lemon curd
