Toast
- 2 slices sourdough or any rustic bread
- 1 tablespoon olive oil

Cheese Mixture
- 2 ounces goat cheese
- 2 ounces mascarpone
- 2 teaspoons honey

Balsamic Strawberries
- 1 cup strawberries
- 1 tablespoon sugar
- 1 teaspoon balsamic reduction

Garnish
- Thyme
- Basil
- Flakey sea salt
Method
Step 1
Wash your strawberries and add them to a pan/saucepan along with 1 tablespoon sugar and cook until the juices are released. Add in balsamic glaze and cook until slightly thickened. Set aside.
Step 2
Drizzle olive oil and toast your bread.
Step 3
To make the cheese mixture- mix goat cheese, mascarpone and honey.
Step 4
Smear the cheese on the bread, add your balsamic strawberries, finish with thyme, basil, flaky salt and enjoy!
