Green Bowl With Roasted Zucchini And Spicy Tahini Dressing

serves 1


1 small zucchini, cut into small slices

olive oil, as needed

1 Avocado, diced

1/2 Green Apple, diced

1 small cucumber, diced

handful sprouts

handful arugula or greens of choice

2 Poached Eggs

spicy tahini dressing (recipe below)

salt and pepper,to taste


Preheat the oven to 400˚F. Add the zucchini slices to a small baking sheet and drizzle with olive oil, then season with salt and pepper. Roast for about 10-15 minutes, turning once, until golden brown. 

Add greens, roasted zucchini, apple, avocado, cucumbers, sprouts and eggs to a bowl. Drizzle with tahini sauce and serve. 

Spicy Tahini Dressing

1 Tbsp creamy tahini 
Juice of 1/2 a lemon 
1 Tbsp water 
Few drops of sriracha *optional*

Mix all ingredients in a small dish using a fork until smooth and creamy. Drizzle over bowl and enjoy!
