Raspberry Bites

(2)
"These raspberry bites are the yummiest healthy little snack and they are so fun and easy to make. This is actually a throwback to a recipe I made earlier this year, but it’s such a perfect 15-minute snack that I had to throw it in the series."

ingredients

  • 1 pint (about 2 cups) fresh raspberries
  • 1/2 cup creamy peanut butter
  • 1 cup dairy-free yogurt
  • 6 ounces dark chocolate
  • Flakey salt (optional), to taste

Method

  • Step 1

Rinse and pat dry the raspberries gently.

  • Step 2

Transfer creamy peanut butter into a piping bag. Carefully fill each raspberry with peanut butter.

  • Step 3

In a bowl, immerse each peanut butter-filled raspberry in dairy-free yogurt until thoroughly coated.

  • Step 4

Arrange the yogurt-covered raspberries on a plate lined with parchment paper. Place the plate in the freezer for approximately an hour, allowing the yogurt to solidify.

  • Step 5

Melt dark chocolate in a heatproof bowl. Dip each raspberry in the melted chocolate, ensuring even coverage, and place it back on the parchment-lined plate.

  • Step 6

Optionally, sprinkle flakey salt over the chocolate-coated raspberries for an extra layer of flavor.

  • Step 7

Allow the chocolate to harden. This can be expedited by placing the plate back in the freezer for a shorter time or letting it set at room temperature.

  • Step 8

Once the chocolate has solidified, serve and enjoy!
