- 1 sheet puff pastry, thawed
- 2 large Granny Smith or Honeycrisp apples
- 2 tablespoons coconut sugar (or granulated sugar)
- 2 tablespoons vegan butter, melted
- Powdered sugar, for dusting
Method
Step 1
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Step 2
Cut the apples horizontally into thick slices, about ½ inch thick. Use a small round cookie cutter or a knife to remove the core from the center of each slice, creating apple rings.
Step 3
In a shallow dish, pour the coconut sugar. Dip both sides of each apple slice into the sugar, ensuring they are evenly coated.
Step 4
Roll out the thawed puff pastry on a lightly floured surface. Cut the pastry into long strips, about 1 inch wide.
Step 5
Take a strip of puff pastry and weave it around each apple slice, starting from the outer edge and coiling toward the center. Use additional strips if needed to completely cover each apple slice.
Step 6
Place the assembled apple puff pastries onto the prepared baking sheet.
Step 7
Brush the tops of the pastries with melted vegan butter.
Step 8
Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown and the apples are tender.

Once out of the oven, let the apple puff pastry rings cool for a few minutes. If desired, dust with powdered sugar before serving.
