These bliss balls by Remy from @VeggieKins capture all of the flavors of a strawberry shortcake in a fun bite-sized treat. You can make them as a snack or for dessert, and they are raw, gluten free, and vegan, so anyone can enjoy them!
10-12 pitted medjool dates
1 cup of raw cashews
1/2-3/4 cup of freeze dried strawberries
1/4 cup of coconut shreds or flakes
1/2 vanilla bean or 1/2 tsp vanilla extract
2 tablespoons of raw cashew butter or nut butter of choice
1 tablespoon of coconut oil
1/2 cup freeze dried strawberries for topping
Pulse the 1/2 cup of freeze dried strawberries in a food processor until you achieve a dust like consistency. Reserve to use as a topping once the balls are complete.
Combine all of the remaining ingredients in a food processor and pulse until a dough-like consistency comes together. If you find the mixture to be a little too sticky, you can add additional coconut shreds and if the mixture is too dry, you can add additional cashew butter or coconut oil.
Take about a teaspoon sized amount and roll into small balls. Toss the balls into the topping and coat with strawberry dust.
