ingredients

  • 200 g dark chocolate
  • 100 g butter
  • 20 honey
  • 1/2 tablespoons vanilla essence
  • 1 tbsp cocoa powder
  • 130 plain biscuits
  • 60 nuts
  • 2 tbsp icing sugar

Method

To prepare the chocolate salami mixture

  • Step 1

    Start by breaking the biscuits into small pieces (break but do not crush). I find the easiest way to do this is by hand.

  • Step 2

    Roughly chop the nuts.

  • Step 3

    Break the chocolate into square and melt.

  • Step 4

    Cut the butter into small pieces, add to the melted chocolate and stir until the butter has melted.

  • Step 5

    Add the honey and vanilla essence and stir.

  • Step 6

    Add the broken biscuits, chopped nuts and cocoa powder and mix well until everything is coated by the chocolate.

How to form the salami

  • Step 1

    Place a sheet of parchment paper on your worktop. Form a row of the chocolate mixture close to the nearside edge of the paper.

  • Step 2

    Roll the paper tightly away from you, compressing the mixture as tight as possible to form a sausage shape. Scrunch the ends if needed to stop the mixture falling out. When the paper is rolled as tightly as you can get it, wrap in plastic film to keep it in shape.

  • Step 3

    Place in the fridge for at least 2 hours to chill and harden.

  • Step 4

    When the salami has chilled and hardened, remove the plastic film and paper and place on a board. Dust icing sugar onto the surface of the sausage and rub in using your fingers until it is fully coated.
