Whole Wheat Vegan Banana Cake

"I am always on a lookout for making food as healthy as I can without having to compromise on the taste and flavor. Trials and errors led to this is healthy banana cake recipe. In the process of making most foods healthy, some balance has to be made between pleasing everyone who is going to eat it and health itself. Therefore, I decided to add some chocolate chips to reach to an equilibrium between my kitchen and the dining table."

ingredients

  • 1 sliced ripe banana
  • 3 cane sugar
  • 1 cups unsweetened soy milk
  • 1 teaspoons vanilla extract
  • 1 cups whole wheat flour
  • 1 teaspoons baking soda
  • 2/3 cups toasted and chopped walnut/almonds/cashews
  • 1/4 cup dairy-free chocolate chips

Method

  • Step 1

    Blend the banana, cane sugar, vanilla extract and soy milk together. Pour this into a large bowl.

  • Step 2

    In a separate bowl, mix whole wheat and baking soda together.

  • Step 3

    Add the flour mixture spoon by spoon into the milk mixture. Keep mixing lightly.

  • Step 4

    After all the flour has been mixed with the banana milk, add the chocolate chips and walnuts. This batter should be a flowing consistency. (Please check footnotes, if it isn't!)

  • Step 5

    Pour this batter into a cake tin lined with parchment paper and bake at 180 degrees C or 350 degrees F or gas mark 4 for 25-30 mins until a tooth pick inserted in the cake comes out clean.

  • Step 6

    Once baked, cool the cake before removing it from the tin! Once cooled, store it in an airtight container in the refrigerator.
