Whole Wheat Pita Breads

ingredients

  • 150 grams whole wheat flour
  • 200 grams all purpose flour
  • 15 grams fresh yeast
  • 5 grams sugar
  • 5 grams salt
  • 5 teaspoons olive oil
  • 1 cups water
  • 1 teaspoons oil

Method

  • Step 1

    Dissolve the sugar and yeast in the water. Use your hands, the yeast may get stuck on a whisk or spoon! Make a heap with both the flours and salt. Make a hole in the center (like a well!)

  • Step 2

    Add this yeast water in the center slowly. Use enough water to knead it into a semi soft dough. (Please check footnotes)

  • Step 3

    Apply some oil on a baking tray and place this dough on it. Keep it covered with a damp cloth! (Resting the dough)

  • Step 4

    After 15 mins, make a hole in the middle of the dough. Add the oil. Knead again. Punch down dough and divide the dough into 20 equal parts.

  • Step 5

    Shape the dough into the desired shape (I like to make rounds) and place them on an oiled baking tray.

  • Step 6

    Put the tray away for 15-20 mins in a warm place. I put it in the (turned off) oven!! If you want thicker pita breads, you could proof this for another 15 mins.

  • Step 7

    Bake at 170 degrees C or 35o degrees F or gas mark 4 for 10-15 mins in a preheated oven.
