Marinated Tofu with Fried Rice

ingredients

  • 4 tablespoons tomato ketchup
  • 2 tablespoons dark soy sauce
  • 1 tablespoons vinegar
  • 4 tablespoons sesame oil
  • 2 tablespoons cooking oil
  • 1 teaspoons ginger chili paste
  • 1 teaspoons sugar
  • To Taste salt
  • To Taste pepper
  • 1/2 cups rice
  • 10 ounces tofu
  • garlic
  • 1 small chopped onion
  • sprigs chopped cilantro

Method

  • Step 1

    Whisk all the ingredients of the marinade together - tomato ketchup, dark soy sauce, vinegar, sesame oil, cooking oil, ginger chili paste, sugar, salt, and pepper.

  • Step 2

    Use half the marinade mixture, to marinade slices Garlic and Tofu for at least 2 hours.

  • Step 3

    After 2 hours, bake this tofu marinade for 15 mins at 200 degrees C. (I have used fresh tofu so have baked the tofu before and after. In case you’re using firm tofu, you can avoid baking tofu after 2 hours of marinade.)

  • Step 4

    Meanwhile, heat the remaining marinade. Add some chopped onions to it and sauté for a few minutes.

  • Step 5

    Add cooked rice to this. Gently fold in the baked tofu and chopped coriander.

  • Step 6

    Bake this rice, (covered with aluminum foil) at 125 degrees C or 250 degrees F or gas mark 1/2, for 20 mins.
