Healthy Chocolate Truffles (Vegan)

"I'm sure, by now you know that I strive to create a "balance" in my cooking. This one has been such a satisfying balance between healthy and junk!! For my husband's birthday, I combined two of his favorite ingredients: Coffee and Chocolate to make a healthy version of truffles. These are coffee flavored, vegan and so healthy!! I love how the flavors of coffee and chocolate still showcase as winners even though they aren't the base ingredients! Dates make the base to this truffle, making it so healthy! ingredients

  • 2/3 cups soaked overnight almonds
  • 1 cups soaked in water for 4-5 hours and rinsed dates
  • 3 tablespoons dairy free cocoa powder
  • 3 tablespoons melted coconut oil
  • 3 tablespoons espresso
  • pinch of sea salt

Method

  • Step 1

    Peel the almonds, roughly chop them and keep them aside.

  • Step 2

    Drain the water from the soaked dates. Remove the seeds from the dates and roughly chop them.

  • Step 3

    Put all the ingredients for the truffle together and grind it into a smooth paste.

  • Step 4

    Place this mixture into a bowl and refrigerate it for 1-2 hours. If you want to speed this process up, freeze it, (covered) for 30 mins.

  • Step 5

    Divide these into 20 equal parts. Place them on a tray lined with butter paper and freeze them again for 10-15 mins.

  • Step 6

    Combine some milk or dark chocolate, some melted coconut oil and 2 tsp of coffee powder together to a smooth, flowing consistency.

  • Step 7

    Remove the truffles from the fridge. Shape them into smooth rounds and place them over a wired oven rack/ stand.

  • Step 8

    Pour this chocolate coating over the balls, so as to cover it completely with the chocolate sauce. Now, carefully place them back on the lined tray.

  • Step 9

    After all the truffles are covered with chocolate, sprinkle them with sea salt or coffee powder on the top!

  • Step 10

    Next, place these in the refrigerator for 10 mins to cool the chocolate down.

  • Step 11

    These can now be transferred and stored in an airtight container in the refrigerator for 7-10 days.
