  • 2 peeled and sliced sweet potatoes
  • 1 tablespoons olive oil
  • 1 teaspoons teriyaki sauce
  • 1 teaspoons freshly squeezed lime juice
  • 1 tablespoons finely chopped spring onions
  • to taste salt
  • to taste. pepper

Method

  • Step 1

    Heat a grill pan over a gas stove. Using a cooking brush, apply some olive oil to the pan.

  • Step 2

    Lower the heat to medium and place the sliced sweet potatoes on the pan to grill. When one side is done, over turn the sweet potato. If you need to brush some more oil over the pan, please do so. Each side usually takes 3-5 minutes.

  • Step 3

    Season the cooked side with salt and pepper. After both the sides are cooked, pour some teriyaki sauce on it and cook for a few more seconds.

  • Step 4

    Remove from the pan, squeeze some freshly squeezed lime juice on it. Place the sweet potatoes on the serving tray, garnish with spring onions and serve immediately.
