ingredients
- 1 cup raw, chopped mango
- 1/2 cup red onion
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoo turmeric powder divided
- 1 teaspoon jaggery or raw cane sugar
- 1 tablespoon extra virgin olive oil divided
- 1 block extra firm sprouted tofu (220g)
Method
Step 1
Mix grated raw mango with 1/4 t turmeric, 1 t salt. Soak at least 24 hours. If soaking for longer store it in a clean glass container and place it in the fridge. This mix will last up to an year in the fridge. I have a large batch of this in the fridge and I often use it to make mango dal.
Step 2
Blend all the marinade ingredients into a smooth paste. Mango, onion, cumin, coriander, chili, jaggery or cane sugar, 1/2 t turmeric, 1 T oil.
Step 3
Wrap the tofu in paper towel and place it in the microwave for 2 mins.
Step 4
Remove the paper and wrap it again in dry paper towel and place a heavy object for 20 mins to remove all the remaining water. This will ensure the tofu to soak up the flavors better.
Step 5
Cut the tofu into thin slabs or as desired.
Step 6
Coat the marinade on all sides of tofu. Skip this if running short on time - Let them rest for 30 to 60 mins.
Step 7
Heat a frying pan and add a little oil, fry the tofu on high for 2 mins on each side. This process will give a nice char to the tofu.
Step 8
Remove & place on a baking sheet and coat them with the marinade again on both sides.
Step 9
Pre-heat the oven to 420 deg.
Step 10
Place the tofu in the middle rack for 10 mins.
Step 11
After 10 mins, flip and coat the open side with the marinade again. And put them back in for another 10 mins.
Step 12
Remove, rest and serve with salad, sandwiches or as burger patties.
