- 1/2 cup (70g) Sainsbury's organic peas
- 1/2 tablespoon olive oil
- Zest of 1 lemon
- Fresh parsley, chopped
- 1/4 cup Violife Foods vegan cheddar, grated
- 1 tablespoon Sauce Shop hot sauce
- 1 clove garlic
- 1/2 avocado
- 2 slices white sourdough bread
- Chilli flakes, to taste
- Fresh parsley, for garnish
Method
Step 1
In a food processor, combine the peas, olive oil, lemon zest, parsley, vegan cheddar, hot sauce, garlic, and a splash of water.
Step 2
Process until smooth, adding more water if needed to achieve your desired consistency. Set aside.
Step 3
Toast the slices of sourdough bread until golden brown and crisp.
Step 4
Mash the avocado in a bowl until smooth or sliced according to preference.
Step 5
Spread a generous layer of the prepared pea mash on each slice of toasted bread.
