- 2 bananas
- 125 millileters light soya milk (or any plant-based milk)
- 125 millileters sparkling water (for extra fluffiness)
- 180 grams oat flour (you can make your own by blending rolled oats)
- 1 teaspoon baking powder
- For the Toppings: Fresh raspberries Peanut butter for drizzling Maple syrup for drizzling
Method
Step 1
In a blender or food processor, combine the ripe bananas, light soya milk, and sparkling water. Blend until you have a smooth mixture.
Step 2
In a mixing bowl, whisk together the oat flour and baking powder.
Step 3
Pour the banana and milk mixture into the dry ingredients and stir until everything is well combined. You should have a smooth pancake batter.
Step 4
Heat a non-stick skillet or frying pan over medium heat. You can lightly grease it with a little oil or cooking spray if necessary.
Step 5
Pour a ladleful of the pancake batter onto the skillet to form a pancake. Cook until you see bubbles forming on the surface, then flip and cook the other side until golden brown. This should take about 2-3 minutes per side.
Step 6
Once all the pancakes are cooked, stack them on a plate. Top the pancakes with fresh raspberries, a drizzle of peanut butter, and a generous pour of maple syrup.
