ingredients

  • 3 cups walnuts, plus more for topping
  • 1/4 cup cacao powder
  • 1 - 2 tablespoons peanut butter
  • 2 tablespoons coconut sugar
  • 15 fresh dates, pitted
  • Pinch of fine sea salt
  • 1 - 2 tablespoons water, adjusted if mixture is too dry
  • 1/4 cup (30 grams) dark chocolate, melted

Method

  • Step 1

    In a food processor, combine the walnuts, cacao powder, peanut butter, coconut sugar, dates, salt, and 1 tablespoon of water. Blend until the mixture is well combined and sticky. Add another tablespoon of water if needed to help it come together.

  • Step 2

    Line a small pan or dish with parchment paper and press the brownie mixture evenly into the base.

  • Step 3

    Pour the melted dark chocolate over the top and spread evenly.

  • Step 4

    Sprinkle extra chopped walnuts on top for added crunch.

  • Step 5

    Freeze for 1 hour or until firm. Slice into squares and enjoy!
