Easy tofu stir-fry

ingredients

  • 6 ounces fresh tofu
  • 6 ounce container fresh veggies/mushrooms
  • 1 tablespoons oil
  • 1 tablespoons sesame seeds
  • 10 pieces cashew nuts
  • 1 tabelspoons tamari
  • 5 cups grain of choice
  • salt

Method

  • Step 1

    Cook the grain of your choice with just a bit of salt according to the instructions on the package.

  • Step 2

    Meanwhile, wash and dry vegetables and mushrooms. Slice.

  • Step 3

    Dry tofu with a paper towel and cut it in cubes.

  • Step 4

    In a large skillet over medium-high heat, heat the oil. Add tofu and vegetables. Cook until vegetables are almost done (it will take between 7-10 minutes).

  • Step 5

    Add cashew nuts, stir, and cook till vegetables are done.

  • Step 6

    Deglaze with tamari. When tamari is evaporated, add sesame seeds, stir, and serve with the grain of your choice on the side.
