ingredients
Shortcakes:
- 1 pound strawberries, sliced
- 1/4 cup sugar, plus more for topping
- 1 teaspoon lemon zest
- 1/2 lemon, juiced
- 1 can Immaculate Baking Organic Flaky Biscuits

Whipped Cream:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/4 cup yogurt
- 1 teaspoon lemon zest
- 1/2 lemon, juiced
Method
Step 1
In a bowl, mix strawberries, sugar, lemon zest, and lemon juice. Let the strawberry mixture macerate for at least one hour or overnight in the refrigerator.
Step 2
Preheat oven on 350°F. Line a baking sheet pan with parchment paper. Place the Immaculate Baking Organic Flaky Biscuits on baking sheet. Sprinkle with a little sugar. Bake the biscuits as per package instructions. Let cool.
Step 3
For the whipped cream: in a bowl, beat heavy cream and sugar. Slowly add yogurt, lemon zest, and lemon juice. Beat until soft peaks form.
Step 4
Split biscuits in half and fill each with a spoonful of strawberries and a dollop of whipped cream. Enjoy!
