Day 23 // Edamame is a powerhouse of nutrition. One cup has at least 6% of the daily intake of nutrients and packed with protein and fiber which is why we chose this as our main ingredient for our homemade hummus! <br><br> Edamame Hummus <br><br> Ingredients <br><br> 2 cups cooked edamame<br> 1/2 cup tahini<br> 1/2 lemon juice<br> 1/2 tsp lemon zest<br> 2 garlic cloves, peeled<br> 4 tbsp. coarsely chopped fresh rosemary<br> 4 tbsp. olive oil (add more if you like your hummus creamier)<br> salt and pepper to taste<br> <br> Instructions: <br><br> Blend edamame, tahini, lemon juice, zest, garlic, and rosemary in food processor. Process until smooth. <br> Drizzle olive oil through feed tube, continuing to process until oil is fully incorporated. <br> Season with salt to taste and serve.
