Edamame Hummus
"Day 23 // Edamame is a powerhouse of nutrition. One cup has at least 6% of the daily intake of nutrients and packed with protein and fiber which is why we chose this as our main ingredient for our homemade hummus!

Edamame Hummus


2 cups cooked edamame
1/2 cup tahini
1/2 lemon juice
1/2 tsp lemon zest
2 garlic cloves, peeled
4 tbsp. coarsely chopped fresh rosemary
4 tbsp. olive oil (add more if you like your hummus creamier)
salt and pepper to taste


Blend edamame, tahini, lemon juice, zest, garlic, and rosemary in food processor. Process until smooth.
Drizzle olive oil through feed tube, continuing to process until oil is fully incorporated.
Season with salt to taste and serve."
