Embracing the Fall with some Butternut Squash Soup with a sprinkle of sunflower seeds. -------------------------------------------- 2 tbsp coconut oil 1 carrot, diced 1 celery stalk, diced 1 onion, diced 4 cups cubed butternut squash 1/2 tsp chopped fresh thyme 4 cups low- sodium chicken broth 1/2 tsp fine sea salt 1/2 tsp ground black pepper 1⃣heat oil in soup pot. Add veggies until soft. 2⃣stir in squash, thyme, broth and seasoning. 3⃣bring to boil, reduce heat and simmer til squash is fork tender. 4⃣ purée in blender and serve -@twohungrybuns
