1.5-2lb piece of Salmon
2 Sprigs of Fresh Parsley – Coarsely Chopped
2 Sprigs of Fresh Thyme – Coarsely Chopped
2 Sprigs of Fresh Dill – Coarsely Chopped
1 Blood Orange – Thinly Sliced
2 Meyer Lemons – Thinly Sliced
1-2 Cloves Garlic, Minced
1 Head of Garlic – top sliced off (Optional)
½ Cup Extra Virgin Olive Oil
Freshly Ground Pepper
Preheat oven to 275F
While the oven is preheating, wash, dry and prepare the Herbs and Citrus. Place Salmon skin-side down in a 9x13 baking dish lined with parchment paper.
Season Salmon with Salt, Freshly Ground Pepper and Minced Garlic.
Top Salmon with the sliced citrus and chopped herbs. Place extra citrus slices (if anyone) and head of garlic (optional) on the sides of your salmon to roast.
Pour the olive oil over the salmon. Place in the oven for 35-40 minutes.
Discard oil and Serve
