Gluten Free and Vegan Apple Muffins
@tuuliatalvio bakes a batch of apple muffins that are vegan and gluten free.

Gluten-free + Vegan Apple Muffins // Tuulia Talvio

makes 6 to 8 muffins



2 tbsp chia seeds + 6 tbsp water

1 ripe banana

3 small apples

3 tbsp coconut oil, melted

2 tbsp maple syrup

1/3 cup oat milk

1/2 cup almond meal

3/4 cup gluten-free oat flour

1 tsp baking powder

1 tsp ceylon cinnamon

1/2 tsp vanilla powder

1/4 tsp cardamom

a pinch of salt



1.Preheat the oven to 400°F / 200°C. In a large bowl, stir chi a seeds with water and allow to thicken up for a few minutes. In another bowl, mash the banana. Cut the apples into small pieces and set aside for a moment.


2.Add the mashed banana, coconut oil, maple syrup, and oat milk to the chia bowl and mixwell. Then add the flour, baking powder, cinnamon, vanilla, cardamom, and salt and mix well. Finally, add in the apples and fold to combine.


3.Spoon the batter into muffin tins and bake for about 30 minutes, until golden brown. Letthe muffins cool slightly before serving. Serve and enjoy!
