Dark Chocolate and Cherry Cream Cheese Whoopie PiesMakes 24 cookies, or 12 pies
Cake½ cup soft butter1 cup granulated sugar2 whole eggs1 tsp vanilla2 cups flour¼ cup unsweetened cocoa powder1 tsp salt1 tsp baking soda1 tsp baking powder1 cup cream
Filling1 13 oz. container marshmallow cream4 tbsp. soft butter1 8 oz. package soft cream cheese½ cup powdered sugar1 cup diced fancy dessert cherries
To make the cookies, pre-heat your oven to 350 degrees. Line a baking sheet with parchment. Cream together butter and sugar until fluffy then add the egg one at a time beating until each is just incorporated. Add vanilla and dry ingredients. Mix for 15-20 seconds then add ½ the cream, mix an addition 15-20 seconds and add the rest of the cream. Mix batter until it’s just come together. Using a self-release ice cream scoop, scoop 12 cookies out onto your baking sheet. Bake for 12 to 15 minutes and repeat. Cool cookies completely before filling.
To make the filling, place the butter & cream cheese into the bowl of your stand mixer or using a hand mixer, mix slowly until it’s completely smooth. Add the marshmallow cream, then the powdered sugar, mix. I added just one drop of all natural red food coloring for a pale pink filling. Next fold the chopped cherries in by hand. Add a hefty dollop of filling to 12 of the cookies then top with another cookie to make a pie!
